Potato Pancakes

INGREDIENTS

2 tbsp Humble Seedz Vegan Original Cream Cheeze

4 Medium potatoes (approx. 425gm)

2 Eggcitable vegan eggs

1/4 Red pepper

1 Medium onion

2 tbsp all-purpose flour

1 tbsp paprika

6 tbsp olive oil

Salt & Pepper to season

 

HOW TO MAKE

Peel and grate potatoes, place in a colander and squeeze out as much liquid as possible.

Finely chop onion and red pepper.

In a bowl, mix potato, onion, red pepper, paprika and seasoning. Add Humble Seedz Cream Cheeze and Eggcitable egg mix, and thoroughly mash and mix together with your hand.

Choose between frying or baking your potato pancakes. Frying is the traditional way, baking is the healthier option.

COOKING OPTIONS

FRY: You can pour your olive oil into a heavy iron skillet, and once oil is hot (but not smoking), place large spoonfuls of mix into the pan, and flatten with the spoon to create 4-inch wide pancakes.

Fry them for 5-6 minutes each side, before placing on paper towels to absorb excess oil before serving.

BAKE: The healthier alternative. Preheat oven to 385ºF.

Oil the base of a baking tray, and layout out your mix, flatten to 4-inches wide, and bake 25-30 minutes, until nice a brown.

Serve with some chopped green onion and a generous spoonful of your favourite Saucy Dipz. We recommend the Red Pepper favour!
