PORTOBELLO TACOS

INGREDIENTS

Saucy Dipz of your choice

Tortilla wraps

1 Large Portobello mushroom

1 Ripe Avocado

2-3 Small Tomatoes

1 Red Onion

Spinach or lettuce leaves

Lime

Parsley

Sea Salt

Hot pepper flakes

 

HOW TO MAKE

Slice mushrooms approx. 1/2 inch thick and sauté in a pan on medium heat for 4-5 minutes per side, until starting to brown nicely. We used a dash of olive oil but often use avocado oil too. Allow to cool.

Mash up avocado with a fork, in a small bowl, and squeeze in the juice of 1/2 lime, and season with salt and pepper, or hot pepper flakes.

Chop up the tomatoes, red onion and parsley.

Lay some salad leaves onto the wraps, add a couple of pieces of mushroom, and then add your avocado, tomato, onions and parsley.

Spoon on a generous amount of Saucy Dipz, we used Ranch in the photo, and you’re ready to roll your wrap!
