Grilled Tofu Skewers

INGREDIENTS

Red Pepper Saucy Dipz

400g Extra firm tofu

3-6 Cherry tomatoes

Yellow pepper

Red onion

2 cloves Garlic

Extra Virgin Olive Oil

Sesame seeds

Salt & Pepper

Wooden Skewers

 

HOW TO MAKE

Preheat oven to 400 degrees Fahrenheit

Cut tofu into approx. 1 inch squares and sauté in a pan with a dash of olive oil and 2 cloves of crushed garlic for a 2-3 minutes. You can do this the day before and refrigerate.

Slice veggies into pieces not much larger than the tofu cubes, and push onto skewer. Add a piece of veg, and then a piece of tofu, and repeat. See photo.

Place skewers onto a parchment paper covered baking sheet, brush with olive oil, and bake for approx. 15 minutes. Turn the skewers over, and continue baking for a further 12-15 minutes, until veggies start look nicely roasted.

To serve, sprinkle on some sesame seeds. We like to toast ours in a small pan for a few minutes first, to bring out the flavour more!

Of course, you’re now ready to drizzle a generous amount of Dipz.
