sweet potato fries

INGREDIENTS

1 Tub Humble Seedz Saucy Dipz of your choice

2 Sweet potatoes

Olive oil

1/3 cup Potato starch

1 Tablespoon Paprika

Garlic salt

HOW TO MAKE

Peel and chop potatoes into 1/4 inch sticks, making sure they are all cut to be the same size.

Let sit in a bowl of cold water for 30 minutes, and then drain and dry on paper towel.

Heat a medium-sized pan of olive oil, about 1 inch deep, to 375˚F. If you don’t have a thermometer, heat oil on medium-low heat until it starts to gently release bubbles, but not quite simmer. Drop in a test fry, and if it immediately starts to sizzle, the oil is ready to use.

Mix the paprika into the potato starch, and sprinkle onto the sweet potato sticks.

Cook in batches, enough fries in the oil so they sit side-by-side and not overlap. We made three batches with the two potatoes we used here.

Place cooked fries on paper towel to remove excess oil, and season with garlic salt when ready to serve.

Any Saucy Dipz will pair well, but we used Ranch.

MORE IDEAS FOR SWEET POTATO FRIES

You can use more starch and roll the sweet potato in it for a thicker crispier coating. You can also double-cook the fries to make them really crispy. Allow them to cool, and fry again for a 3 - 4 minutes.

This is an indulgent snack, and you can of course bake them instead of frying for a healthier option. Try cooking them on a baking tray (use parchment paper) for about 20 minutes at 425˚F. They’ll go dark brown, as the sugars in the potato starts to caramalize.
