Carrot Ginger Soup

INGREDIENTS

Caesar Saucy Dipz

1 kg Peeled carrots

2 Onions

4-5 Garlic cloves

1/2 tbsp Turmeric

1/3 cup Fresh ginger

Simon loves food and cooking, and spends many hours each week experimenting in the kitchen. He also grows his own vegetables, and this recipe is borne from an abundance of carrots this year!

 

HOW TO MAKE

Peel and chop carrots in halves or thirds. Boil in a saucepan of water until you can easily stick a fork in them. When they are soft, they can easily be blended in a puree. Don’t drain the water, blend them in it, you’ll need this to make a liquid viscosity. You may need to add some more water, or alternatively, some veggie broth.

Finely chop the onions, garlic and ginger. With a dash of olive oil, sauté onions for 6-7 minutes or until they start to brown. Add garlic towards the end, for the last couple of minutes.

Put the onions and garlic, along with the raw ginger pieces, into a blender, and puree. You’ll need to add little water some everything gets pureed easily.

Pour the onion, garlic and ginger puree into the carrot puree, add the turmeric. Mix in well, and allow to simmer for 45 minutes, with a lid on the saucepan. Season with salt and pepper, to taste. You may need to add more water, or broth, if you want a runnier consistency.

When ready to serve, spoon on a generous amount of Caesar Saucy Dipz, and garnish with sunflower seeds and chopped parsley.

SIMON’S NOTES

“This is a very sweet tasting soup on its own, but the apple cider vinegar in the Caesar Saucy Dipz balances out the flavour perfectly.

You could actually make this with a couple of large spoonfuls of Humble Seedz Cream Cheeze if you want a creamy texture. Alternatively, this can be made without the onion, garlic, or ginger. Pureed carrots on their own with Saucy Dipz, is a wonderfully simple and tasty treat too!”
