pea & mint pasta
INGREDIENTS
1 tub Humble Seedz Ranch Dipz
2 cups fresh peas
225 g rotini pasta (half a box)
1/2 Red onion
1/2 Lemon
Fresh parsley, mint and thyme
HOW TO MAKE
For this recipe we used peas and herbs straight out of the garden. If you don’t have a herb garden, or at least a pot of parsley and thyme growing in the kitchen, we highly recommend you do!
Boil water in a small pot, and pop in the peas for a couple of minutes. Take off the heat and drain. Set aside.
Boil your pasta in a large pan until al dente. Drain water, and keep a cup handy, in case you need to add a little back in.
Finely chop the red onion, and cut up a small bunch of fresh parsley, and some mint and parsley to taste.
Stir your Dipz into the pasta, squeeze in the juice of half a lemon, and add the peas, onion, and herbs.
Serves 2
MORE IDEAS FOR PEA & MINT PASTA
You can put as much or as little parsley and mint as you wish. You might consider just adding in mint to keep things a little more traditional.
