VEGAN SAUSAGE ROLLS

INGREDIENTS

Humble Seedz Red Pepper Saucy Dipz

2 10x10 sheets of puff pastry, thawed according to package

12 vegan breakfast sized sausages

2 red onions (any onions will work)

1 heaping tbsp vegan butter

1/2 tbsp brown or coconut sugar

3 tbsp balsamic vinegar

1 tbsp water for closing pastry dough

1 container Humble Seedz Roasted Red Pepper Saucy Dip

Optional: melted coconut oil for brushing pastry

These surprisingly simple, sweet and savoury sausage rolls are a must for entertaining. They are perfectly brown and crispy on the outside, with sweet caramelized onion, creamy red pepper sauce and savoury sausage on the inside -- the perfect combination!

Just make sure not to eat too many off the pan and save some for your guests -- they really are that hard to resist!

 

HOW TO MAKE

Preheat oven to 400ºF.

Firstly, remember to thaw your pastry according to the package, if you are using frozen pastry.

Begin by caramelizing your onions. To do this, sauté your chopped onions over medium heat with vegan butter until they begin to slightly brown -- approximately 10 minutes.

When your onions start to brown, add your sugar and stir to coat. Cook for a few more minutes.

When the onions begin to brown further, and may start to stick to the pan, deglaze your pan using the balsamic vinegar, and continue stirring. Continue to cook over medium-low heat for approximately 15 more minutes, until onions are soft and caramelized.

Roll out your pastry dough and spread Humble Seedz Red Pepper Saucy Dipz along one edge of the pastry. Add your sausage on top of where your dip is spread, along the length of the pastry, adding caramelized onions right beside your sausage.

Roll your pastry over your sausage/onion/red pepper dip. Seal the pastry by dabbing a small bit of water along the edge (should be approx 1/2 of your pastry roll). Cut your pastry along the edge and repeat with the second half of your pastry roll & second sheet of pastry.

Cut your sausage rolls with a sharp knife to desired size.

Add your sausage rolls to a baking sheet. Brush with coconut oil if desired and score the top of your pastry with a sharp knife.

Bake at 400ºF for 20 minutes or until your pastry is golden brown.

Serve with additional Humble Seedz Roasted Red Pepper Dip. Enjoy!
